I may have a 3 day work week but I am busier than usual this week. Here are my dinner plans starting from this past Saturday night.
- Southwestern sweet potato breakfast skillet
- pan-seared arctic char, red potatoes, and squash
- squash ravioli, salad
- hummus platter, brie
- roasted black bean tacos, green beans
- butternut squash gnocchi, salad
And suddenly I find myself preparing a post-Beer Fest dinner for my out-of-town friends. I am on the search for make-ahead dishes because who wants to cook after a 6 hour beer fest? Better yet, who is safe enough to use various utensils and heat a dinner party after a 6 hour beer fest?
